14 Days of Zespri – Day 10

Ten days into the Zespri kiwifruit fourteen day challenge, I can hardly believe it. I may not have posted every single day, but I’ve been eating at least one kiwi a day since this challenge started. I’m feeling a little lighter, a little healthier and a whole lot more inspired. I’ll definitely not overlook these fuzzy fruits with the jewelled middles if I see them when out doing our weekly grocery shopping.

Kiwi Coleslaw and Kassler Lunch

I used today’s allocation of kiwifruit in an Asian flavoured coleslaw. I mixed it with sliced celery, julienne ginger, grated carrot, thinly sliced red and green cabbage, a sprinkling of sesame seeds and a drizzle of soy sauce. This is a delicious fresh version of a coleslaw, a lot lighter than mayonnaise laden variety, and is a good partner to the salty smoky kassler.

Today’s lunch:

  • Kiwi coleslaw with celery, ginger, carrot, red cabbage, green cabbage, kiwifruit and sesame seeds,
  • a little blue bear bottle filled with soy sauce to drizzle over the coleslaw just before eating,
  • a sliced kassler chop and
  • some baby tomatoes.

When I bought this spanspek (also known as cantaloupe) I knew that I wanted to eat it with prosciutto or a similar style cured ham. The only cured ham the supermarket had at the time was something called spek which I’d never tried before. That didn’t stop me from buying it though. I’m not going to lie, the alliteration in the title tickled me, but I found the flavour of the spek was too strong for the melon.

Today’s Lunch:

  • Cubes of spanspek wrapped in spek and
  • a salad with shredded cabbage, red onion, sugar snap peas and baby tomatoes.

Hello out there! Is there anyone out there? I really hope so, it’s been way too long since there was a new post around here. With this post (and more to come) I’m hoping to revive my dear blog and also healthier lunchtimes for me. So without further ado, here is what’s in today’s lunch box.

Today’s Lunch:

  • A salad of nectarine slices and goats milk chevin
  • on a bed of mixed salad leaves, red cabbage, sugar snap peas, shaved carrot and baby tomatoes .

#432 – Dumpling Lunch

I had these dumplings hiding out in my freezer begging to be freed from their icy home. I finally gave in to their demanding little voices and heated them in a makeshift steamer* before popping them into my lunch box.

Today’s Lunch:

  • Chicken dumplings (with the beautiful plaited pattern on them),
  • pork dumplings,
  • edemame beans,
  • baby tomatoes,
  • shredded cabbage and
  • a little bottle of soy sauce.

*a colander set over a pot of boiling water and topped with the pot’s lid

#429 – Gammon Sandwich Lunch

Sandwich and salad. It’s the combo I usually fall back on when I don’t have sufficeint leftovers to fill my lunch box. I try to keep the flavours interesting so that I’m not too tempted to head down the road to Cookshop for a plate from the daily buffet.

Today’s Lunch:

  • Gammon steak and wholegrain mustard on brown sead loaf with lettuce and radicchio and
  • some cabbage, carrot, fennel and orange salad.

#403 – Chicken Sandwich Lunch

Most of my lunches consist of leftovers from supper the night before, but sometimes there are no leftovers. That’s when a sandwich comes to the rescue, you can fill them with anything you can think of and they are really easy to eat (well so long as you don’t stuff them with too many fillings).

Today’s Lunch:

  • Multigrain brown bread sandwich filled with lettuce, chicken mayonnaise and pickled zucchini (that was included in this week’s CSA bag),
  • red and green cabbage and sesame seed salad and
  • some grapes.

Today’s Lunch:

  • Wholewheat penne tossed with tomato sauce and crumbled feta and
  • a salad with baby cabbage leaves, mixed sprouts, cucumber, tomato and carrot.
