Guess what’s for lunch today?  Leftovers from this month’s daring cooks challenge.

Today’s Lunch:

  • A slice of green chile and grilled chicken stacked enchilada,
  • refried beans and
  • a salad with lettuce, onion, baby tomatoes and avocado.

Our hosts this month, Barbara of Barbara Bakes and Bunnee of Anna+Food have chosen a delicious Stacked Green Chile & Grilled Chicken Enchilada recipe in celebration of Cinco de Mayo! The recipe, featuring a homemade enchilada sauce was found on www.finecooking.com and written by Robb Walsh.

I chose to make a single large stacked enchilada instead of individual smaller ones.  Not being able to get my hands on Anaheim chillies or tomatillos I also had to improvise and used what chillies I could get my hands on and the suggested green tomatoes with tamarind to replace the tomatillos. #408 - Tuna and Tomato Pasta

This pasta sauce is a great pantry staple creation: a box of passata, a tin of tuna and a handful of salty capers cooked together for a few minutes and then spooned over pasta. You can completely change the flavour by adding (think chilli, olives and anchovies) or subtracting an ingredient or two.

Today’s Lunch:

  • Wholewheat penne topped with a tuna, caper and tomato sauce and
  • some grated Parmesan style cheese.

#395 - Chicken Salad

Three years ago today I posted my first post on Blogs24 (now Letterdash), it’s hard to believe but all the posts are all there to prove it. As I did last year I’m going to have a little giveaway to celebrate, so keep a lookout for a post on that this weekend sometime.

I found a punnet of red currants in my local Woolworths the other day. They were so bright and cheerful they just had to come home with me. I paired them with some roast chicken and feta cheese in a salad and it was very yummy indeed.

Today’s Lunch:

  • Chicken salad with mixed leaves, cucumber, tomato, bean sprouts, feta cheese, shredded roast chicken, red currants and spring onions
  • and a banana (not pictured).
