#437 - Lentil and Bacon Salad

As much as I try to keep my lunches healthy and lean sometimes it’s nice to break the rules a little. Who can resist a piece of yummy bacon anyway? I think I struck a nice balance between the sweet, smoky, crispy bacon and the lentils and other crunchy veggies in this salad.

Today’s Lunch:

  • Lentil and bacon salad with mixed lettuce leaves, red onion, carrot, mange tout and baby tomato,
  • some grapes and
  • a plum.

When I saw this recipe for a chilled-spiced beetroot soup in the current (Jan/Feb 2011) issue of Pick n Pay‘s Fresh Living magazine I knew it make a great packed lunch for a warm Summer’s day. The flavours and vibrant colour would provide a welcome midday break and ensure I could forge ahead with the afternoon’s tasks.

Today’s Lunch:

  • Chilled beetroot soup,
  • some grapes and
  • a mini Babybel cheese.

So here we are, a couple of weeks into 2011 and probably just getting the hang of writing 1 and the end of the year instead of that mischievous 0. By now we are all trying to make the transition from holiday mode to work mode whether we had an end of year break or not. For me work mode also includes getting back into my routine of packing lunches for myself. For the first packed lunch of the year I chose a basic almost school lunch combo of tortilla wraps and fruit. Perhaps not very exciting but it fulfilled it’s destiny of filling my tummy and helping me stay awake during the late afternoon slump.

Today’s Lunch:

  • Caprese wraps – tortillas filled with baby tomatoes, slices of mozzarella cheese and lettuce,
  • a grape, apple & rooibos juice box,
  • a doughnut peach and
  • some grapes.

I often see okra in my local Checkers but, not knowing how to cook it and having read tales of how slimy it can be, have usually avoided buying it.  After a little internet research I discovered cooking okra with tomatoes reduces the slime factor.  With this knowledge I took the plunge, bought some okra and devised this lentil and okra curry.

Today’s Lunch:

  • Lentil and Okra curry,
  • brown rice with sun dried tomatoes,
  • coriander yoghurt,
  • dried mango and
  • some grapes.

Here is my recipe for Lentil and Okra Curry.

Ingredients:

  • 1 cup of black lentils
  • 1 tsp olive oil
  • 2 onions thinly sliced
  • 2 garlic cloves minced
  • 4 tablespoons curry powder
  • 4 tomatoes roughly chopped
  • 2 cups tomato puree
  • 1 cup water
  • 300g okra topped and tailed then cut into 1cm rounds
  • 1 green pepper cut into strips

Method:

  1. Cover lentils with water and leave to soak (overnight is best, but I only soaked them for four hours and this was sufficient).
  2. Fry onions and garlic in olive oil till the onions are translucent.
  3. Add curry powder and stir to coat.
  4. Add lentils, chopped tomatoes, tomato puree and water and leave to cook for 15 minutes.
  5. Add okra and green pepper then cook for a further 5 minutes.

Service over rice with coriander yoghurt.

Makes 4-6 servings.

#409 - Beef and Watercress Sandwich

I bought some porcini butter from the Funki Fungi stand at the Neighbourgoods Market awhile ago. I’ve been using it for all sorts of dishes, but my favourite way to use it is in a simple sandwich where it’s subtle flavour really gets to shine.

Today’s Lunch:

  • Sliced silverside, watercress and porcini butter sandwich on rye bread,
  • baby tomatoes,
  • baby corn,
  • orange, radish. mint and toasted almond salad and
  • some grapes

Most of my lunches consist of leftovers from supper the night before, but sometimes there are no leftovers. That’s when a sandwich comes to the rescue, you can fill them with anything you can think of and they are really easy to eat (well so long as you don’t stuff them with too many fillings).

Today’s Lunch:

  • Multigrain brown bread sandwich filled with lettuce, chicken mayonnaise and pickled zucchini (that was included in this week’s CSA bag),
  • red and green cabbage and sesame seed salad and
  • some grapes.

#396 - Chicken Fried Rice

The little panda shaped soy sauce bottle in today’s lunch is part of a small package of bento goodies a friend brought back from Japan for me after a recent visit. I’ve been eyeing these little bottles for awhile, but the price of buying them over the internet is a big prohibiting factor. Especially when I know that they are not that expensive to buy in Japan itself. I feel very lucky to have gotten my hands on some now and am going to have lots of fun using them in the future.

Today’s Lunch:

  • Chicken and mushroom fried rice with short grain brown rice, shredded roast chicken, sliced mushrooms, diced yellow and orange peppers and some chives,
  • broccoli,
  • a panda bottle filled with ponzu and
  • some grapes.
